Preparation of Mangoes

Peel and Chop Mangoes
Begin by peeling the ripe mangoes. Cut them into small chunks and place them in a blender or food processor.

Blend Mangoes
Blend the mango chunks until smooth and creamy. Set aside the mango puree.
Making the Simple Syrup

Create Simple Syrup
In a saucepan, combine the water and granulated sugar. Heat over medium heat, stirring until the sugar has fully dissolved. Remove from heat and allow to cool.
Combining Ingredients

Mix Mango Puree and Syrup
In a large mixing bowl, combine the mango puree with the cooled simple syrup and fresh lime juice. Stir well until all ingredients are fully incorporated.
Freezing the Sorbet

Chill in Freezer
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. If you don’t have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer.

Scrape and Blend
If using a shallow dish, every 30 minutes, scrape the mixture with a fork to break up any ice crystals. Repeat this process for about 2-3 hours until the sorbet is fully frozen and fluffy.

Once the sorbet is ready, scoop it into bowls or cones. Enjoy immediately or store in an airtight container in the freezer for later.
