Method
Prepare the Burger Patty

Drain and Crumble Tofu
Drain the firm tofu and press it between paper towels to remove excess moisture. Crumble the tofu into a large mixing bowl.

Cook Mushrooms
In a skillet over medium heat, add 1 tablespoon of olive oil. Add the finely chopped mushrooms and sauté for about 5-7 minutes until they are softened and any liquid has evaporated. Add minced garlic and cook for an additional 1-2 minutes. Remove from heat and let cool.

Combine Ingredients
To the bowl with crumbled tofu, add the sautéed mushrooms, soy sauce, cornstarch, breadcrumbs, salt, and black pepper. Mix until all ingredients are well combined.

Form Patties
Divide the mixture into 4 equal portions and form each portion into a patty shape.

Cook Patties
In the same skillet, add the remaining tablespoon of olive oil. Cook the patties over medium heat for about 5-6 minutes on each side, or until they are golden brown.
Assemble the Burger

Toast the Buns
While the patties are cooking, slice the burger buns and toast them lightly on a separate skillet or in a toaster.

Add Cheese
Once the patties are cooked, place a slice of sharp cheddar cheese on each patty and cover for 1-2 minutes to melt the cheese.

Build the Burger
On the bottom half of each toasted bun, spread a generous amount of aioli. Place the cheesy patty on top, followed by lettuce, tomato slices, and onion slices. Top with the other half of the bun.
