Bread Preparation

Slice the Baguette
Cut the baguette into 1/2 inch slices on a diagonal to maximize the surface area.

Toast the Bread
Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush each side lightly with olive oil. Toast in the oven for about 5-7 minutes or until golden brown and crisp.

Chop the Tomatoes
Dice the Roma tomatoes into small cubes and place them in a mixing bowl.

Prepare the Basil
Chop the fresh basil leaves coarsely and add them to the bowl with the tomatoes.

Slice the Mozzarella
Cube the fresh mozzarella cheese into small pieces and add it to the mixture.

Season the Mixture
Drizzle the mixture with the extra virgin olive oil and balsamic vinegar. Add salt and black pepper to taste. Gently toss all ingredients together until evenly combined.

Top the Toasts
Remove the toasted baguette slices from the oven and let them cool slightly. Spoon the tomato, basil, and mozzarella mixture generously onto each slice.
