Prepare the Shishito Peppers

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

Add the shishito peppers to the skillet in a single layer. Cook for 5-7 minutes, turning occasionally, until the peppers are blistered and slightly charred. Remove from heat and set aside.

In a small saucepan, heat 1 cup of vegetable oil over medium heat.

Prepare Soy-Cilantro Vinaigrette

Mix Vinaigrette Ingredients
In a small mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, chopped cilantro, and honey or maple syrup until well combined.
Assemble and Serve

On a serving platter, arrange the blistered shishito peppers. Drizzle with the soy-cilantro vinaigrette.
