Prepare the Vegetables
Wash and slice the Asian pears into thin strips. Cut the Napa cabbage into quarters, remove the core, and slice it into bite-sized pieces. Julienne the carrots into thin strips, and chop the green onions into small pieces. Set all prepared vegetables aside.

In a food processor, combine the garlic cloves, ginger, Korean red pepper flakes, fish sauce, sugar, and salt. Blend until it forms a smooth paste. Adjust seasoning if necessary.

Combine Vegetables and Spice Paste
In a large mixing bowl, add the prepared Asian pears, Napa cabbage, carrots, and green onions. Pour the spice paste over the vegetables. Use your hands (wearing gloves) to thoroughly mix everything until the vegetables are well coated with the spice paste.

Pack the Kimchi
Transfer the kimchi mixture into a clean glass jar or airtight container. Pack it tightly, leaving some space at the top for fermentation gases to escape. Seal the jar or container.
