    Prepare the Ingredients

    Start by cleaning the pork hock and cutting the carrots and potatoes into chunks. Mince the garlic and chop the onion.

    Marinate the Pork

    In a bowl, mix soy sauce, fish sauce, minced garlic, black pepper, and sugar. Add the pork hock to the marinade and let it sit for at least 30 minutes.

    Sear the Pork

    In a large pot, heat a little oil over medium heat. Sear the marinated pork hock on all sides until browned.

    Add Vegetables

    Once the pork is browned, add the chopped onion, carrots, and potatoes to the pot.

    Simmer

    Pour in the water and bring to a boil. Reduce to a simmer, cover, and cook for about 2 hours or until the pork is tender.

    Prepare the Rice

    While the pork is cooking, rinse the rice and cook it according to package instructions.

    Once the pork is tender, remove it from the pot. Stir in the potato cream to the remaining sauce. Serve the pork hock with the vegetables, marinated eggs, and rice on the side.
