Prepare the Protein
Boil the shrimp in salted water for about 3-4 minutes until pink and cooked. Drain and cool. Cook the pork loin in the same water for about 10-12 minutes until fully cooked. Let it cool and slice into thin strips.

Cook the Rice Vermicelli
In a pot of boiling water, cook the rice vermicelli according to package instructions (usually 3-5 minutes). Drain and rinse under cold water to stop the cooking process.

Prepare the Peanut Sauce
In a small bowl, mix together the peanut butter, soy sauce, rice vinegar, sugar, water, and chili flakes until smooth. Adjust seasoning to taste.

Assemble the Spring Rolls
Soak a rice paper wrapper in warm water until soft, about 10-15 seconds. Lay it flat on a clean surface. Place a lettuce leaf, a small handful of rice vermicelli, a few shrimp, slices of pork, mint, and cilantro in the center. Fold the sides over and roll tightly from the bottom to the top. Repeat until all ingredients are used.

Serve the fresh spring rolls with the peanut sauce on the side for dipping.
