Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, taking care not to cut into the meat. Season generously with salt, black pepper, garlic powder, and paprika.

Cook the Pork Belly
Place the pork belly on a roasting rack in a baking dish. Roast in the preheated oven for about 2 to 2.5 hours, until the meat is tender. Increase the oven temperature to 425°F (220°C) for the last 30 minutes to crisp the skin.

Roast the Brussels Sprouts
After removing the pork belly from the oven, place the Brussels sprouts on a baking sheet and roast them in the oven at 425°F (220°C) for about 20-25 minutes, or until they are crispy and golden brown.

In the last 10 minutes of cooking, brush the pork belly with honey to add a sweet glaze.
