    Prepare the Ingredients

    Start by cutting the beef tenderloin into bite-sized cubes. Chop the carrots and potatoes into similar size pieces. Bruise the lemongrass stalks by hitting them with the back of a knife to release their flavor.

    Sear the Beef

    In a large pot, heat a tablespoon of oil over medium-high heat. Add the beef cubes and sear them until browned on all sides. Remove the beef from the pot and set aside.

    Cook the Aromatics

    In the same pot, add the bruised lemongrass, star anise, and cinnamon stick. Stir for about 1-2 minutes until fragrant.

    Combine Ingredients

    Return the beef to the pot, then add the carrots and potatoes. Pour in enough water to cover the ingredients. Bring to a boil.

    Simmer the Stew

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld together. Stir occasionally and add more water if necessary.

    Once cooked, remove the lemongrass stalks and cinnamon stick. Serve the beef stew hot, garnished with fresh herbs if desired.
