Preheat the Oven
Preheat your oven to 325°F (160°C).

Prepare the Cheesecake Mixture
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the granulated sugar, mixing well until combined. Add the vanilla extract, ube extract, and mix until incorporated.

Add the Eggs
Add the eggs one at a time, mixing on low speed until just blended after each addition. Be careful not to overmix.

Incorporate Sour Cream and Flour
Gently fold in the sour cream. Sift the all-purpose flour over the mixture and fold until just combined.

Bake
Pour the cheesecake mixture into a greased 9-inch springform pan. Bake in the preheated oven for 50-60 minutes or until the center is set but slightly jiggly.

Cool
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
