Cheesecake Preparation

Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes, then remove and let cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the ube extract, sour cream, heavy cream, vanilla extract, and eggs one at a time, mixing until fully incorporated and smooth after each addition.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Chill the Cheesecake
After cooling in the oven, refrigerate the cheesecake for at least 4 hours, or overnight for best results.

Prepare Taro-Ube Sauce
In a small saucepan over medium heat, combine 1 cup of ube puree (can be store-bought) with 1/2 cup of sugar and 1/2 cup of water. Stir until the sugar is dissolved and the mixture thickens slightly, about 5-7 minutes. Remove from heat and let cool.

Serve
Once the cheesecake is chilled, slice and serve with the taro-ube sauce drizzled on top and a side of fresh berries.
