Prepare the Hash Browns
Heat a non-stick skillet over medium heat. Add the hash browns and cook until golden brown and crispy, about 5-7 minutes on each side. Keep warm.
Poach the Eggs
Bring a pot of water to a gentle simmer. Add a splash of vinegar. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes until whites are set but yolks are still runny. Remove with a slotted spoon and set aside.
Make the Old Bay Hollandaise
In a heatproof bowl, whisk the egg yolks and lemon juice until pale and thick. Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in melted butter, whisking continuously until the sauce thickens. Stir in Old Bay seasoning and salt to taste.
