Prepare the Balsamic Reduction
In a small saucepan, bring the balsamic vinegar to a boil over medium heat. Reduce the heat to low and let it simmer for about 15-20 minutes, or until it has reduced by half and has a syrupy consistency. Set aside to cool.

Prepare the Portabella Mushrooms
Preheat your oven to 400°F (200°C). Clean the portabella mushrooms by wiping them with a damp cloth. Remove the stems and place the caps on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, black pepper, and garlic powder.

Roast the Mushrooms
Roast the portabella mushrooms in the preheated oven for 15-20 minutes, or until they are tender and cooked through. Remove from the oven and set aside.

Sauté the Spinach
In a skillet over medium heat, add a tablespoon of olive oil. Add the fresh spinach and sauté until wilted, about 3-5 minutes. Season with a pinch of salt and set aside.

Assemble the Dish
Once the mushrooms are roasted, layer the sautéed spinach onto each portabella cap. Top with roasted red peppers and slices of fresh mozzarella cheese.

Melt the Cheese
Return the assembled mushrooms to the oven for an additional 5-7 minutes, or until the mozzarella is melted and bubbly.

Drizzle with Balsamic Reduction
Remove the mushrooms from the oven and drizzle with the reduced balsamic vinegar before serving.
