Prepare the Protein or Vegetable
If using chicken, flatten the chicken breasts to an even thickness. If using meatballs, ensure they are fully cooked. For eggplant, slice into 1/2 inch thick rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture, then rinse and pat dry.

Layer and Bake
Preheat the oven to 200°C (400°F). In a baking dish, spread a layer of sauce at the bottom. For chicken or meatballs, place them on top of the sauce. For eggplant, layer the slices on top. Cover with more sauce and top with mozzarella and parmesan cheese.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.
Serving

Serve Hot
Remove the Parmigiana from the oven and let it sit for 5 minutes before serving. Serve hot, garnished with additional fresh basil if desired.
