    Prepare the Pizza Dough

    If using store-bought pizza dough, follow the package instructions. If making from scratch, combine flour, yeast, water, salt, and olive oil in a bowl. Knead the dough for about 10 minutes until smooth. Let it rise in a warm place for 1 hour until doubled in size.

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and roast in the oven for 30-35 minutes until soft and caramelized. Allow to cool, then squeeze the roasted garlic cloves into a bowl.

    Prepare the Sauce

    In a small bowl, combine the roasted garlic with a pinch of salt and black pepper. Mash the garlic into a paste using a fork.

    Assemble the Pizzeta

    Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a baking sheet or pizza stone. Spread the roasted garlic paste evenly over the dough.

    Add Cheese and Bake

    Sprinkle the Romano cheese evenly over the garlic spread, followed by the mozzarella cheese. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.

    Garnish and Serve

    Remove from the oven and immediately sprinkle fresh basil on top. Drizzle with a little more olive oil, if desired. Allow to cool for a few minutes before slicing and serving.
