Prepare the Eggplant
Wash the eggplant thoroughly and cut it into fry-sized sticks, about 1/4 inch thick.

Bread the Eggplant Sticks
Take each eggplant stick, coat it in flour, dip it in the beaten eggs, and then roll it in the breadcrumb mixture until well coated. Set aside on a plate.
Frying the Eggplant Fries

Heat the Oil
In a large pot or deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Eggplant Fries
Carefully add the breaded eggplant sticks to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
Serving

Place the crispy eggplant fries on a serving platter and serve hot with a side of marinara sauce for dipping.
