    Prepare the base

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté for about 5-7 minutes or until the vegetables are softened.

    Add garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Brown the meat

    Add the ground beef and ground pork to the pot. Cook, breaking up the meat with a spoon, until browned, about 8-10 minutes.

    Deglaze with wine

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Allow the wine to simmer for 2-3 minutes.

    Add tomatoes and spices

    Stir in the crushed canned tomatoes, tomato paste, bay leaf, dried oregano, salt, and black pepper. Mix well to combine.

    Simmer the sauce

    Bring the sauce to a gentle simmer. Reduce the heat to low and cover partially. Let it simmer for at least 30 minutes, stirring occasionally. For a richer flavor, simmer for up to 1 hour.

    Serve

    Remove the bay leaf before serving. Serve the Bolognese sauce over cooked rigatoni pasta and enjoy!
