Preparation Steps

    Prepare the Potatoes

    Peel and chop the Yukon Gold potatoes into even chunks. Place them in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return them to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Prepare the Asparagus

    While the potatoes are cooking, trim the woody ends off the asparagus. Toss with olive oil, salt, and pepper.

    Grill the Asparagus

    Preheat a grill or grill pan over medium-high heat. Grill the asparagus for about 5-7 minutes, turning occasionally, until tender and slightly charred. Set aside.

    Cook the Filet Mignon

    Season the filet mignon with salt and pepper on both sides. Heat a skillet over high heat and add a tablespoon of olive oil. Sear the filet for about 4-5 minutes on each side for medium-rare, adjusting time as needed for your preferred doneness.

    Chop the scallions and toss them with a little olive oil, salt, and pepper.
