Method

Short Ribs

    Prepare the Ribs

    Preheat your oven to 325°F (165°C). Season the beef short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned. Remove and set aside.

    Cook the Vegetables

    In the same pot, add onion, carrot, and celery. Sauté until softened, about 5 minutes. Add garlic and cook for an additional minute.

    Deglaze and Braise

    Pour in the red wine, scraping the bottom of the pot. Add beef broth, thyme, and bay leaves. Return the ribs to the pot, cover, and braise in the oven for 2.5 to 3 hours until tender.

    Cook the Grits

    In a saucepan, bring water to a boil. Add grits and salt, reduce heat and cook, stirring occasionally until thickened, about 20 minutes.

    Finish the Grits

    Remove from heat and stir in butter and sharp cheddar cheese until melted and creamy.

Balsamic Brussels Sprouts

    Roast the Brussels Sprouts

    On a baking sheet, toss Brussels sprouts with olive oil, balsamic vinegar, salt, and black pepper. Roast at 400°F (200°C) for 20-25 minutes until caramelized and tender.
