    Roasting the Grapes

    Preheat your oven to 400°F (200°C). Spread the seedless grapes on a baking sheet in a single layer. Drizzle with olive oil, sprinkle with salt and black pepper. Roast for 15-20 minutes until they are soft and slightly caramelized.

    Toasting the Walnuts

    While the grapes are roasting, place the walnuts on a separate baking sheet and toast them in the oven for about 8-10 minutes, until fragrant and golden. Keep an eye on them to prevent burning.

    Preparing the Vinaigrette

    In a small bowl, whisk together the white balsamic vinegar, honey, and a pinch of salt and black pepper. Adjust the sweetness or acidity to taste.

    Assembly

    Once the grapes and walnuts are done, remove them from the oven and let them cool slightly. In a serving bowl, combine the roasted grapes, toasted walnuts, and grated Manchego cheese. Drizzle with the white balsamic vinaigrette and toss gently to combine. Top with fresh thyme if desired.
