Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30-40 minutes until they are deeply caramelized and golden brown.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for an additional 2 minutes. Then, add the white wine to deglaze the pot, scraping up any browned bits from the bottom.

    Simmer the Soup

    Pour in the beef broth, add thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes. Remove the bay leaf before serving.

    Prepare the Crostini

    While the soup is simmering, preheat the oven to 400°F (200°C). Slice a baguette into 1/2-inch slices, brush with olive oil, and bake for 5-7 minutes until golden.

    Assemble and Serve

    Ladle the soup into oven-safe bowls, top with grated Gruyère cheese, and broil until the cheese is melted and bubbly. Serve with the garlic crostini on the side.
