Soup Base Preparation

    Caramelize the Onions

    In a large pot, melt butter and olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30 minutes.

    Add Garlic and Deglaze

    Add minced garlic and cook for another 2 minutes. Pour in the white wine to deglaze the pot, scraping up any brown bits from the bottom.

    Simmer the Soup

    Add beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

Toppings Preparation

    Prepare Cheese Topping

    Remove bay leaf from soup and ladle it into oven-safe bowls. Mix Gruyère and Parmesan cheese together and top each bowl of soup with the cheese mixture.

Crostini Preparation

    Make Crostini

    Preheat the oven to 400°F (200°C). Brush baguette slices with olive oil and rub with a cut garlic clove. Place on a baking sheet and bake for about 10 minutes or until golden and crispy.

Final Assembly

    Broil and Serve

    Place the bowls of soup under the broiler until the cheese is bubbly and golden, about 3-5 minutes. Serve the soup hot with the garlic crostini on the side.
