Prepare the Dates
Preheat the oven to 375°F (190°C). Carefully make a small slit in each pitted date and stuff each one with blue cheese.

Wrap the Dates
Wrap each stuffed date with a slice of bacon, securing with a toothpick if necessary.

Candied Bacon Topping
In a small bowl, mix together brown sugar, Szechuan sauce, soy sauce, rice vinegar, and water. Brush the mixture over the bacon-wrapped dates.

Bake
Place the wrapped dates on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the bacon is crispy and caramelized.

Prepare the Drizzle
While the dates are baking, prepare the sweet and sour drizzle by mixing Szechuan sauce, soy sauce, rice vinegar, and sesame seeds in a small bowl.

Garnish and Serve
Remove the dates from the oven, let them cool slightly, then drizzle the sweet and sour mixture over them and garnish with chopped green onion before serving.
