Prepare the Dates
Preheat your oven to 375°F (190°C). While the oven is preheating, make a lengthwise slit in each date and remove the pit. Stuff each date with about 1/4 ounce of blue cheese.

Wrap with Bacon
Take a slice of bacon and wrap it around each stuffed date, securing it with a toothpick if necessary. Place the wrapped dates on a baking sheet lined with parchment paper.

Bake
Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and caramelized.

Make the Szechuan Drizzle
In a small saucepan, combine honey, soy sauce, rice vinegar, chili paste, and Szechuan peppercorns. Simmer over low heat for about 5-7 minutes until slightly thickened. Season with salt and black pepper to taste.

Once the bacon-wrapped dates are done, remove them from the oven and drizzle with the sweet and sour Szechuan sauce. Serve warm.
