Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half lengthwise.

Season the Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy, tossing halfway through.

Add Cheese and Lemon
Once the Brussels sprouts are done roasting, remove them from the oven and immediately drizzle with lemon juice. Sprinkle grated Parmesan cheese and crumbled goat cheese on top while they're still hot.

Serve with Ranch Dressing
Transfer the crispy Brussels sprouts to a serving platter and serve with ranch dressing on the side for dipping.
