Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot and bring to a boil. Reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender. Remove from heat and let it sit covered for 10 minutes.

Make the Marinade
In a small bowl, whisk together soy sauce, sesame oil, and rice vinegar.

Marinate the Tuna
Cut the Ahi tuna into small cubes and place it in a bowl. Pour the marinade over the tuna and toss gently to coat. Let it marinate in the refrigerator for about 15 minutes.

Prepare the Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into thin slices.

Assemble the Poke Bowl
In a bowl, add a scoop of sushi rice as the base. Top with the marinated tuna, avocado slices, seaweed salad, and a sprinkle of red tobiko and sesame seeds. Garnish with chopped green onions.
