Prepare the Peaches
Wash the fresh peaches thoroughly under running water. Slice each peach in half, remove the pit, and cut into small chunks. You should have approximately 4 cups of chopped peaches.

Combine Peaches with Lemon Juice
In a mixing bowl, add the chopped peaches and pour the lemon juice over them. Gently toss to coat the peaches evenly, which helps to preserve their color and enhance flavor.

Sweeten the Peaches
Add honey and granulated sugar to the bowl of peaches. Stir gently until all the sweeteners are fully incorporated and the peaches release some of their juices.

Layer the Dessert
In serving glasses or bowls, add a layer of the sweetened peach mixture followed by a layer of Greek yogurt. Repeat the layering until the glasses are filled, ending with a layer of yogurt on top.

Garnish and Serve
Finely chop the fresh mint leaves and sprinkle them over the top layer of yogurt for garnish. Serve immediately or chill in the refrigerator for 30 minutes before serving for a cooler dessert.
