Ingredients

Chicken Marinade

Preparation

Marinating the Chicken

1. Prepare the Marinade

In a large bowl, combine the buttermilk, hot sauce, salt, and black pepper. Mix well.

2. Marinate the Chicken

Add the chicken thighs to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, or overnight for best results.

Coating the Chicken

3. Prepare the Coating

In a separate bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.

4. Coat the Chicken

Remove the marinated chicken from the refrigerator. Dredge each piece of chicken in the flour mixture, shaking off the excess. Ensure the chicken is well coated.

Frying the Chicken

5. Heat the Oil

In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

6. Fry the Chicken

Carefully add the coated chicken pieces to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 8-10 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

7. Drain the Chicken

Using a slotted spoon, remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil.

8. Add Caviar

Once the chicken is slightly cooled, top each piece with a spoonful of caviar for an elegant finish.
