Duck Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Duck

    Rinse the whole duck under cold water and pat it dry with paper towels. Season the inside and outside of the duck with salt, black pepper, and garlic powder. Place the fresh rosemary inside the cavity of the duck.

    Roast the Duck

    Place the duck on a roasting rack in a roasting pan, breast side up. Roast in the preheated oven for approximately 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste the duck with its own juices halfway through cooking.

    Prepare the Vegetables

    Peel and chop the carrots and potatoes into even-sized pieces. This ensures they cook uniformly.

    Season and Roast

    In a large bowl, toss the chopped carrots and potatoes with olive oil, salt, black pepper, and thyme. Spread the vegetables around the duck in the roasting pan for the last 45 minutes of cooking.

    Make the Sauce

    While the duck is roasting, finely chop the shallots. In a saucepan over medium heat, melt the butter. Add the shallots and cook until softened, about 3-4 minutes.

    Add Liquids

    Pour in the red wine and chicken broth, then add fresh thyme. Bring to a boil and reduce the heat. Simmer for about 15-20 minutes, or until the sauce has reduced and thickened slightly.

    Strain and Serve

    Once the sauce has thickened, strain it to remove the shallots and thyme. Serve alongside the roasted duck and vegetables.
