Buttermilk Brining

    In a large bowl, mix together buttermilk, salt, sugar, garlic powder, onion powder, black pepper, paprika, and cayenne pepper until well combined.

    Add the chicken pieces to the brine, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

Coating and Frying the Chicken

    In a separate bowl, combine flour, cornstarch, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.

    In a large skillet or deep fryer, heat oil to 350°F (175°C).

    Remove chicken from brine and shake off excess liquid. Dredge each piece in the coating mixture, pressing to adhere.
