Infuse the Bay Leaves
In a small saucepan, add 1 cup of water and the 5 fresh bay leaves. Bring to a gentle simmer over medium heat and then remove from heat. Let the bay leaves steep for about 15 minutes to create a bay leaf infusion.
Prepare the Simple Syrup
In a separate small saucepan, combine equal parts sugar and water (1 cup each) over medium heat. Stir until the sugar is fully dissolved, then let it cool. Use 0.5 oz of this simple syrup for your daiquiri.
Mix the Daiquiri
In a cocktail shaker, add the 2 oz of white rum, 1 oz of fresh lime juice, and 0.5 oz of the prepared simple syrup. Strain the bay leaf infusion (discarding the leaves) and add 1 oz of the infusion to the shaker.
Shake the Cocktail
Add 1 cup of ice cubes to the shaker. Seal and shake vigorously for about 15 seconds until well chilled.
Strain and Serve
Strain the mixture into a chilled cocktail glass. Garnish with a lime wheel and a fresh bay leaf on top.
