In a large skillet or Dutch oven, heat olive oil over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.

Cook the Ground Beef
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 8-10 minutes.

Incorporate Tomatoes and Olives
Add the tomato sauce, chopped olives, and bay leaf. Stir to combine.

Simmer the Picadillo
Reduce heat to low, cover, and let simmer for 30-40 minutes, stirring occasionally. Adjust seasoning if needed.

Remove the bay leaf before serving. Serve hot with rice or tortillas.
