Prepare the Yuca

Peel the yuca root and cut it into thick fries. Rinse the cut yuca under cold water.

Boil the Yuca

In a large pot, bring water to a boil. Add the yuca fries and cook for about 15-20 minutes until they are tender but not falling apart. Drain and let them cool.

Fry the Yuca

In a deep skillet or fryer, heat vegetable oil over medium-high heat. Once hot, fry the yuca in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

Make the Cilantro Dipping Sauce

In a blender, combine fresh cilantro, lime juice, and garlic. Blend until smooth, adding a bit of water if needed to achieve a dipping sauce consistency.

Serve

Serve the crispy yuca fries hot with the cilantro dipping sauce on the side.
