    Prepare the Potatoes

    Boil the potatoes in salted water until fork-tender. Drain, and mash them in a bowl until smooth. Set aside to cool.

    Make the Picadillo Filling

    In a skillet, heat some oil over medium heat. Add chopped onion, garlic, and bell pepper. Sauté until softened. Add ground beef and cook until browned. Stir in tomato sauce, green olives, cumin, salt, and pepper. Cook for another 5 minutes until well combined. Remove from heat and let cool.

    Assemble the Papas Rellenas

    Take a portion of the mashed potatoes and flatten it in your palm. Add a spoonful of the picadillo filling in the center and fold the potato over to enclose the filling. Roll it into a ball and set aside. Repeat with remaining potatoes and filling.

    Coat the Balls

    In a bowl, beat the eggs. Dip each stuffed potato ball into the egg, then roll in breadcrumbs until fully coated.

    Fry the Papas Rellenas

    In a deep pot, heat the oil over medium-high heat. Fry the potato balls in batches until golden brown and crispy, about 4-5 minutes. Remove them from the oil and drain on paper towels.

    Serve the papas rellenas hot, with your choice of dipping sauce.
