    Prepare the Pork

    Preheat the oven to 300°F (150°C). In a blender, combine garlic, salt, black pepper, oregano, cumin, and lemon juice to create a marinade. Rub this marinade all over the pork shoulder and let it marinate for at least 2 hours, preferably overnight.

    Roast the Pork

    Place the marinated pork in a roasting pan. Cover it with foil and roast in the preheated oven for about 4 to 5 hours, or until the meat is tender and easily pulls apart. Remove the foil for the last 30 minutes to allow the skin to crisp up.

    Sauté the Onions

    While the pork is roasting, slice the onions thinly. In a skillet, heat olive oil over medium heat. Add the onions and sauté until they are soft and caramelized, about 15-20 minutes. Season with salt and pepper to taste.

    Assemble the Sandwich

    Once the pork is done, remove it from the oven and let it rest for 15 minutes. Shred the pork and place it on the crusty bread rolls. Top with the sautéed onions and serve immediately.
