    Prepare the Plantains

    Peel the ripe plantains by cutting off both ends and making a slit down the length of the skin. Remove the skin and slice the plantains diagonally into 1-inch thick pieces.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.

    Fry the Plantains

    Carefully add the sliced plantains to the hot oil in a single layer. Fry them for about 2-3 minutes per side, or until they are golden brown and caramelized.

    Drain and Season

    Remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot.

    Serve the maduros warm as a delicious side dish or snack.
