    Prepare the Marinade

    In a bowl, combine crushed garlic, soy sauce, citrus juice, black pepper, salt, and bay leaves. Mix well.

    Marinate the Pork

    Place the pork shoulder in a large dish and pour the marinade over it. Ensure the pork is well-coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Remove the pork from the marinade and place it on a roasting pan. Drizzle with olive oil. Roast in the preheated oven for about 4-5 hours or until the internal temperature reaches 190°F (88°C).

    Prepare Sautéed Onions

    In a skillet, heat some olive oil over medium heat. Add sliced onions and sauté until soft and caramelized, about 10-15 minutes.

    Serve

    Once the pork is done, let it rest for 15 minutes before slicing. Serve topped with the sautéed onions.
