Prepare the Yucca
Peel the yucca and cut it into 3-4 inch pieces. Rinse them under cold water to remove any dirt.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is hot enough by dropping a small piece of yucca in; it should sizzle.

Fry the Yucca
Once boiled yucca is cool enough to handle, pat them dry with paper towels. Carefully place the yucca pieces in the hot oil in batches. Fry them for about 3-5 minutes, or until they are golden brown and crispy.

Drain and Season
Remove the fried yucca from the oil and place them on paper towels to drain excess oil. Sprinkle with salt to taste.
For the Mojito Sauce

Prepare the Ingredients
Gather all the ingredients for the mojito sauce. Wash the mint leaves thoroughly.

Blend the Sauce
In a blender or food processor, combine the mint leaves, garlic, lime juice, olive oil, and salt. Blend until smooth and well combined. Adjust seasoning if necessary.

Serve
Transfer the mojito sauce to a serving bowl. Serve the fried yucca hot with the mojito sauce on the side for dipping.
