Soak the Black Beans

Rinse the black beans under cold water to remove any debris or dust. Place the beans in a large bowl and cover with water. Let them soak for at least 8 hours or overnight for best results.

Chop Vegetables

While the beans are soaking, chop the bell pepper and onion into small pieces. Mince the garlic cloves.

Combine Ingredients

In a large pot or slow cooker, combine the soaked black beans, chopped bell pepper, onion, minced garlic, cumin, chili powder, salt, black pepper, and vegetable broth.

Cook the Beans

If using a slow cooker, set it to low and cook for 4 hours. If using a stovetop, bring the mixture to a boil, then reduce heat to low and simmer for 4 hours, stirring occasionally. Ensure the beans are tender and the flavors meld together.

Once the beans are cooked, serve them hot as a side dish or over rice, garnished with chopped cilantro or avocado if desired.
