Method

Beef Preparation

  1. 1

    Cook the Beef

In a large pot, combine the flank steak, water, salt, black pepper, and cumin. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for about 2 hours or until the beef is tender.

  2. 2

    Shred the Beef

Remove the beef from the pot and let it cool slightly. Once cool enough to handle, shred the beef using two forks. Reserve some of the cooking liquid for later.

Vegetable Preparation

  1. 3

    Slice the Vegetables

While the beef is cooking, slice the onion and bell pepper into thin strips. Mince the garlic cloves.

Final Cooking

  1. 4

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the sliced onion, bell pepper, and minced garlic. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized.

  2. 5

    Combine Beef and Vegetables

Add the shredded beef to the skillet with the sautéed vegetables. Pour in the lime juice and a splash of the reserved cooking liquid to keep the mixture moist. Stir to combine and cook for an additional 5-10 minutes, allowing the flavors to meld together.
