    Prepare the Plantains

    Peel the green plantains by cutting off the ends and making a vertical slit along the sides. Carefully remove the skin.

    Slice the Plantains

    Cut the peeled plantains into 1 to 1.5-inch thick slices.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

    First Fry

    Fry the plantain slices in the hot oil for about 3-4 minutes on each side until they are golden and slightly soft. Remove from the oil and drain on paper towels.

    Flatten the Plantains

    Using the bottom of a glass or a tostonera, flatten each fried plantain slice to about half an inch thickness.

    Second Fry

    Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes on each side until they are crispy and golden brown. Remove and drain on paper towels. Sprinkle with salt to taste.

Mojito Sauce

    Prepare the Sauce

    In a food processor, combine fresh cilantro, garlic cloves, lime juice, olive oil, salt, and black pepper.

    Blend the Ingredients

    Pulse the mixture until smooth. Adjust seasoning with additional salt or pepper if desired.

    Serve

    Transfer the mojito sauce to a small bowl and serve alongside the crispy tostones.
