Cooking Vegetables

    Prepare the Vegetables

    Wash and chop all the vegetables: zucchini, broccoli, onion, bell pepper, carrot, and mushrooms into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and sauté for 2-3 minutes until it becomes translucent.

    Add Remaining Vegetables

    Add the zucchini, bell pepper, carrot, and mushrooms to the skillet. Sauté for another 5-7 minutes until they start to soften.

    Finish with Broccoli

    Add the broccoli florets and continue to sauté for an additional 3-5 minutes, until all vegetables are tender but still crisp.

Making Garlic Cilantro Sauce

    Combine Ingredients

    In a blender or food processor, add the chopped cilantro, minced garlic, lemon juice, olive oil, salt, and black pepper.

    Blend the Sauce

    Blend the ingredients until smooth. Adjust seasoning to taste and set aside.

Preparing Sweet Pepper Glaze

    Mix the Glaze Ingredients

    In a small bowl, combine the sweet chili sauce, soy sauce, and rice vinegar. Stir well until the mixture is smooth.

Serving

    Plate the Dish

    Once the vegetables are cooked, remove them from heat. Drizzle the garlic cilantro sauce over the sautéed vegetables.

    Glaze and Serve

    Drizzle the sweet pepper glaze over the top and serve warm.
