Grilled Chicken Preparation

    Marinate the Chicken

    In a bowl, mix the olive oil, minced garlic, lemon juice, paprika, cumin, salt, and black pepper. Rub this mixture all over the halved chicken, ensuring it is well coated. Cover and let marinate for at least 1 hour, or overnight in the refrigerator for best flavor.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F or 190°C).

    Grill the Chicken

    Place the marinated chicken on the grill, skin side down. Grill for about 15-20 minutes, then flip and grill for another 15-20 minutes or until the internal temperature reaches 165°F (74°C) and the skin is crispy.

Rice Preparation

    Cook the Rice

    In a saucepan, bring 2 cups of water to a boil. Add the rice and salt. Stir once, cover, and reduce heat to low. Cook for about 15-20 minutes until the water is absorbed and the rice is tender. Fluff with a fork.

Black Beans Preparation

    Sauté Onions and Garlic

    In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cumin, cooking for an additional minute.

    Heat the Black Beans

    Add the canned black beans (drained) to the onion mixture. Stir and heat through. Season with salt and black pepper to taste. Simmer for 5 minutes.

Fried Yucca Preparation

    Boil the Yucca

    In a large pot, bring salted water to a boil. Add the yucca sticks and cook for about 15-20 minutes until tender. Drain and let cool slightly.

    Fry the Yucca

    In a deep skillet, heat the vegetable oil over medium-high heat. Add the boiled yucca sticks and fry until golden brown, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt.

Tostones Preparation

    Fry the Plantains

    In a deep skillet, heat vegetable oil over medium-high heat. Fry the plantain slices until they are light golden, about 3-4 minutes. Remove from oil and drain on paper towels.

    Smash and Fry Again

    Using the bottom of a flat dish, gently smash each fried plantain slice, then return them to the hot oil. Fry again until crispy and golden, about 3-4 minutes. Drain on paper towels and sprinkle with salt.
