Glazed Grilled Vegetables and Pineapple

    Soak Skewers

    Prepare the bamboo skewers by soaking them in water for at least 30 minutes to prevent burning on the grill.

    Chop Vegetables

    Cut bell peppers, zucchini, and red onion into bite-sized pieces.

    Make Glaze

    In a bowl, mix olive oil, soy sauce, honey, garlic powder, salt, and black pepper to create the glaze.

    Skewer Ingredients

    Thread the vegetables and pineapple chunks onto the soaked bamboo skewers, alternating between each.

    Glaze Skewers

    Brush the skewers with the glaze mixture.

    Grill Skewers

    Preheat the grill over medium heat. Grill the skewers for about 10-15 minutes, turning occasionally until the vegetables are tender and slightly charred.

Rice and Black Beans

    Heat Black Beans

    In a saucepan, heat the canned black beans over medium heat. Stir in cumin and cook until heated through, about 5 minutes.

    Combine Rice and Beans

    In a serving bowl, combine cooked rice, black beans, chopped cilantro, and lime juice. Mix well.

Tostones

    Prepare Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry Plantains

    In a frying pan, heat vegetable oil over medium heat. Fry the plantain slices for about 3-4 minutes on each side until golden.

    Flatten and Fry Again

    Remove the fried plantains, flatten them with the bottom of a glass, and return them to the oil for another 2-3 minutes of frying.

    Season Tostones

    Remove from oil, drain on paper towels, and season with salt to taste.
