Method

Fish Preparation

  1. 1

    Prepare the Fish

If using whole snapper, clean and scale the fish thoroughly. Pat the fish dry with paper towels. For fish fillets, ensure they are also dry.

  2. 2

    Prepare the Breading

In a bowl, mix the flour, cornmeal, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and milk until combined.

  3. 3

    Coat the Fish

Dip the fish into the egg mixture, allowing excess to drip off, then coat it in the flour-cornmeal mixture. Press lightly to ensure the coating sticks.

  4. 4

    Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

  5. 5

    Fry the Fish

Carefully place the breaded fish in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Sides Preparation

  1. 6

    Cook the Rice

Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover and cook for 18-20 minutes or until water is absorbed.

  2. 7

    Prepare the Maduros

Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. In a separate skillet, heat vegetable oil over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side.

  3. 8

    Make the Salad

Chop the lettuce, tomato, and cucumber into bite-sized pieces. In a bowl, combine the chopped vegetables, drizzle with olive oil and vinegar, and season with salt and black pepper to taste. Toss to combine.
