Prepare the Fish
If using whole snapper, clean and scale the fish thoroughly. Pat the fish dry with paper towels. For fish fillets, ensure they are also dry.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Fish
Carefully place the breaded fish in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Rice
Rinse the white rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce to low heat, cover and cook for 18-20 minutes or until water is absorbed.

Prepare the Maduros
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces. In a separate skillet, heat vegetable oil over medium heat. Fry the plantain slices until golden brown on both sides, about 2-3 minutes per side.
