Marinating the Pork

    Prepare the Marinade

    In a large mixing bowl, combine minced garlic, chopped onion, soy sauce, lime juice, dried oregano, ground cumin, salt, and black pepper. Mix well until the ingredients are fully blended.

    Marinate the Pork

    Place the pork shoulder in a large resealable plastic bag or a deep dish. Pour the marinade over the pork, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for best flavor.

Cooking the Lechon Asado

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Prepare the Cooking Ingredients

    In a large roasting pan, add sliced onions and drizzle with olive oil. Spread them evenly across the bottom of the pan.

    Roast the Pork

    Remove the pork from the marinade and place it on top of the onions in the roasting pan. Pour 1 cup of water into the pan to keep the pork moist during cooking. Cover the pan with aluminum foil.

    Slow Roast

    Place the roasting pan in the preheated oven and roast for about 4 to 5 hours, or until the pork is fork-tender. Remove the foil during the last hour to allow the pork to brown.

    Shred the Pork

    Once cooked, remove the pork from the oven and let it rest for about 15 minutes. Use two forks to shred the pork into bite-sized pieces and mix it with the cooked onions.
