Prepare the Beans
Rinse the black beans under cold water. If using dried beans, soak them in water overnight, then drain.

Chop Vegetables
Dice the onion, red bell pepper, and green bell pepper into small pieces. Mince the garlic cloves.

Sauté the Vegetables
In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion, red bell pepper, and green bell pepper. Sauté for about 5-7 minutes until the vegetables are soft.

Add Garlic and Spices
Add the minced garlic, cumin, smoked paprika, chili powder, salt, black pepper, and cayenne pepper to the pot. Stir well and cook for another 2-3 minutes until fragrant.

Combine Ingredients
Add the rinsed black beans and vegetable broth to the pot. Stir to combine all ingredients.

Slow Cook
Bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if needed.

Taste the frijoles and adjust seasoning if necessary. Add more salt, pepper, or spices to taste.
