Dough Preparation

Make the Dough
In a large bowl, combine all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

Add Egg and Water
Add the egg and ice water gradually, mixing until a dough forms. Knead briefly until smooth.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Prepare Spinach Filling
In another skillet, heat olive oil over medium heat. Sauté chopped onion until translucent. Add fresh spinach and cook until wilted. Mix in crumbled feta, salt, and pepper. Let it cool.

Assembly and Baking

Preheat Oven
Preheat your oven to 375°F (190°C).

Roll Out Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a round cutter.

Fill and Fold Empanadas
Place a tablespoon of your chosen filling in the center of each dough circle. Fold over and crimp the edges with a fork to seal.

Prepare Egg Wash
In a small bowl, beat together 1 egg and 1 tablespoon of water. Brush the mixture over the empanadas.

Bake Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
