    Make the Dough

    In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.

    Add Flour

    Once boiling, remove from heat and stir in the all-purpose flour until the mixture forms a ball.

    Incorporate Eggs

    Let the dough cool for about 5 minutes, then beat in the eggs one at a time until smooth.

    Prepare Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Pipe the Churros

    Transfer the dough to a piping bag fitted with a star tip. Pipe strips of dough (about 6 inches long) into the hot oil, cutting them with scissors.

    Fry the Churros

    Fry the churros until golden brown, about 2-3 minutes on each side. Remove them with a slotted spoon and drain on paper towels.

    Coat with Cinnamon Sugar

    In a bowl, mix granulated sugar and cinnamon. Roll the fried churros in the cinnamon sugar while they are still warm.

    In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

    Remove from heat and add the semi-sweet chocolate chips. Stir until the chocolate is completely melted and the mixture is smooth.

    Stir in the vanilla extract for added flavor.
