Method

Marinating the Steak

    Prepare the marinade

    In a bowl, mix olive oil, minced garlic, lime juice, cumin, salt, and black pepper.

    Marinate the steak

    Place the New York steak in the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for better flavor.

Cooking the Congri

    Cook the ingredients

    In a pot, heat a bit of oil and sauté the chopped onion, bell pepper, and minced garlic until softened.

    Add rice and beans

    Add the black beans, long-grain rice, bay leaf, vegetable broth, salt, and black pepper to the pot. Stir well.

    Simmer

    Bring to a boil, then cover and reduce heat to low. Simmer for 20-25 minutes or until the rice is cooked and liquid is absorbed.

Preparing Yucca and Tostones

    Cook the yucca

    In a large pot, boil salted water and add the yucca chunks. Cook until tender, about 20-25 minutes, then drain.

    Prepare tostones

    Peel and slice the green plantains into 1-inch thick pieces. Heat vegetable oil in a frying pan over medium-high heat.

    Fry plantains

    Fry the plantain slices for 3-4 minutes on each side until golden. Remove and flatten each piece with a flat surface. Return to the oil and fry until crispy. Season with salt.

Cooking the Steak and Eggs

    Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and grill for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Preparing the Ensalada de Casa

    In a bowl, combine chopped romaine lettuce, chopped tomato, and sliced cucumber.
