Marinating the Steak

Marinate the steak
Place the New York steak in the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for better flavor.
Cooking the Congri

Add rice and beans
Add the black beans, long-grain rice, bay leaf, vegetable broth, salt, and black pepper to the pot. Stir well.

Simmer
Bring to a boil, then cover and reduce heat to low. Simmer for 20-25 minutes or until the rice is cooked and liquid is absorbed.
Preparing Yucca and Tostones

Cook the yucca
In a large pot, boil salted water and add the yucca chunks. Cook until tender, about 20-25 minutes, then drain.

Prepare tostones
Peel and slice the green plantains into 1-inch thick pieces. Heat vegetable oil in a frying pan over medium-high heat.

Fry plantains
Fry the plantain slices for 3-4 minutes on each side until golden. Remove and flatten each piece with a flat surface. Return to the oil and fry until crispy. Season with salt.

Make the salad
In a bowl, combine chopped romaine lettuce, chopped tomato, and sliced cucumber.
